I just returned from my second trip to Puglia, both with Cinzia. (Stile Mediterraneo) The beauty, the people, the food, the olive oil, and the wine of the region filled my heart.and soul. Cinzia is so organized, thoughtful, thorough and brilliant/knowledgeable, and funny that I felt as though I entered a story book tale. Life in the south of Italy and with Cinzia is just that perfect. I overwhelmingly recommend her trips for all "wanna-be Italians, and anyone else who wants to experience paradise.

Oh my goodness. I mean, so much goodness! This was my second trip with Cinzia. The first was 3 years ago with 2 friends. This year, we talked 3 more into coming with us. It was the trip of a lifetime. She took us to her favorite shops in Milan before heading to Alba the next day. Such goodness.
We toured (with 4 others) Alba and its surroundings, in the Piedmont region. We attended the International Truffle Fair, tasted wonderful cheeses, wines, dined in spectacular places (castles, even!), and had a cooking class with 2 marvelous chefs plus Cinzia, all expertly arranged by Cinzia. We got to go truffle hunting one beautiful fall morning and found several black truffles! (Truth: the dogs find the truffles. We cheer them on.) We got to enjoy a couple of days of Marika's company this time, as well. Such a treat!
I can't recommend Cinzia's tours highly enough. She makes it all seem so easy - and she is so much fun, and knows so much! Please, do yourself this kindness: go on a trip with Cinzia.

1) The tour group was small: no flag to follow or earphones to wear or disgruntled group members to trip over.

2) The tour attracted fun, friendly, interesting people, respectful of each other and of place too.

3) The food was constantly fantastic: of the region, fresh, tasty, surprising, thoughtful.

4) The wine was constantly fantastic: of the region, fresh, tasty, soulful, spirited.

5) The place we stayed (for the full week) was constantly fantastic: unpack that bag and . . . take a dip, have a drink, or take a nap, have a chat in the super snuggly chairs of the library.

6) Particularly intriguing were the visits to the different farm-restaurant establishments where we walked through the olive groves, vineyards, and vegetable fields, hearing directly from the producers how they held to organic-plus processes (of irrigation, soil maintenance, solar power) while remaining financially feasible.

7) #6 activity was always balanced with time in the producer’s kitchen and at their table, learning regional recipes from the resident chef(s) and sharing a meal in celebration.

8) Hands-on hands-on hands-on!

9) We learned the truth about gluten. Ah ha!

10) We learned to make bread from hard durum wheat flour. Wheat berries + proper grinding = tasty bread that is good for you.

11) We visited a bakery celebrated for its Nun’s Tetta’s (as in the English ta-ta’s). Seriously.

12) We visited a confectionery that made the best candy I have every eaten in my life: imagine the lush taste of your grandma’s old-recipe lemon square, packed round a resident almond, the whole covered in a shiny silver coating of almond-whatever. Oh my oh my.

13) Cinzia is every adjective I’ve used in the prior twelve reasons, as well as super intelligent and concerned you learn, without being stuffy. I learned a lot. I laughed a lot. And in the most delicious of ways.

This was my second time with Cinzia and Marika after almost 10 years. And again, it was magical. Very educating and meaningful. I was solo traveler that joined another small group of people and eventually found new friends. We spent one week in a such special place of Puglia – La Murgia. Living in the peaceful nature among olive and grape trees, hidden away from all the noise of the world (Biomasseria Lama di luna). We were learning to cook devine foods with best restaurant chefs of area (Chef Sabino/Ceffalicchio, chef Gennaro/Masseria Barbera) taste exceptional vines and get to know very special and inspiring people. People whos philosophy of life is very meaningful for saving nature and old traditions. It was a honnor to visit biodynamic agriculture farm of Giancarlo Ceci, artisanal Giovanni Mucci family’s confetti production, unique small family bakery in Almatura, Ceffalicchio olive oil and vine producer, lovelly Masseria Barbera in Minervino Murge, Pietro Zitos restaurant Antichi Sapori. All these places left footprints not only in my memory, they gave me posiibility to meet owners of these places, have a talk and understand how devoted they are to their land, philosophy and family traditions. I am still fascinated and very greatful that I had this opportunity.
This experience is not only about food and travel. It is about the importance of balance in our lifes, respect for the nature and healthy lifestyle. After this trip, I feel a better person, it changed my way of thinking and ofcourse cooking. Cinzia is very experienced, devoted and fun person to be with and learn from. And after meeting her again after 10 years I see how she has grown to a very high level proffesional that can create unforgettable and precious moments, to give profound knowledge and inspirtaion for those who seek. Thank you for making it so special!I will come back.

It was such a pleasure for Marika and I to have you again with us after 10 years. Thank you so much for your super nice words and for appreciating what we do in Puglia in order to promote food & wine producers who want to have an impact on the world through their products that are good for us and for the planet. I have to say that without the amazing people, like you, who joined us, our week would not have been so special. It's all about the people and Marika and I thank you so much for coming back and contributing so much with your enthusiasm for what we were providing. We really look forward to seeing you very soon again.

My spouse and I recently returned from a weeklong trip in Puglia with Cinzia Rascazzo, the owner and operator of Stile Mediterraneo. This was our third travel experience with Cinzia, and all of them have been superb. In 2013, during our first visit to the Puglia region of Italy, we took a daylong class on olive oil with Cinzia that was transformative in how we now cook and eat. Last year (Sept. 2016), we joined a small group excursion with Cinzia and her sister and business partner, Marika, to the island of Sardinia. That experience was so fascinating that we returned to Sardinia on our own this year to see it again. And last month (Sept. 2017), we took another small group trip with the Rascazzo sisters to an area of Puglia that we had not visited in 2013. Here we learned that 'locavore' and 'farm-to-table' and 'zero kilometer food' are not foodie trends but just the way things are done. What makes Stile Mediterraneo so special is its owner-manager-operator-teachers. Cinzia and Marika are knowledgeable and enthusiastic ambassadors for Mediterranean cuisine and culture generally, as well as their own home region, Puglia, in particular. Moreover, they share that knowledge and passion with their clientele by creating immersive, participatory experiences for their ‘students’ (as opposed to other tours where one might simply ride around on a bus and listen to lectures and look at things). Because Stile Mediterraneo focuses heavily on foodways and cuisine, these experiences typically involve learning about how different artisanal food products are made and consumed—and then trying your hand at making and consuming them. Nothing quite like making artisanal bread with the artisanal bakers themselves! Finally, as retired educators, we know that small is beautiful when it comes to class size, and the same is true for tour groups: on a continuum from bespoke tours to mass tours, Stile Mediterraneo operates very close to the ‘bespoke’ end of the spectrum. The group trips we have taken were both small enough that we could get to know the other members of the group, as well as Cinzia and Marika, much better than we ever could on a larger tour or cruise. The small tours and cooking classes that Stile Mediterraneo features offer an intimacy and flexibility that we prize greatly. Like other 'fans' of Cinzia and Marika, we look forward to our next opportunity to learn from them.

Grazie mille!! Thank you so much for these beautiful words. Marika and I love so much what we do because it allows us to meet special and wonderful people -now friends- like the two of you...and your friends/family members you referred to us. You are excellent students (not only former educators!). Knowing that we "transformed the way you eat and cook" is a wonderful compliment.... esp because you are such excellent cooks. We look so much forward to seeing you both again.

For our fourth consecutive year, my wife and I have partaken of a week with the Stile Mediterraneo Food and Lifestyle Academy. Stile Mediterraneo is owned by two powerful young women, Cinzia Rascazzo (a Harvard MBA) and Marika Rascazzo (a cardiologist). Together, they undertake to educate folks like us about the food, wine and lifestyles of various parts of Italy. This year, we explored Puglia - La Murgia, sort of the middle part of Puglia. We were headquartered in a masseria called Lama di Luna just outside of Andria. Having already had a week in the southern part of Puglia (where we were headquartered in Lecce), I can report that this region is totally different from the southern part in its style of pasta, choice of protein, bread, olive oil and wine. As with our first trip, we were treated to three cooking classes, each more intense than the previous one. The first one taught us the way to make Pugliese bread, the best example of which is made in Altamura (where we visited an artisanal bakery which makes bread in the DOP historic way). We had then cooking classes with two young chefs, the first of whom, Chef Sabino, had in a few short months turned around a restaurant attached to a biodynamic winery (Cefalicchio) that was previously getting unfavorable reviews. While I don't think he had ever done anything like a hands on cooking class before, he put up with us and we had a wonderful time learning from him. He uses old recipes simplified and made more healthy. We also had a cooking class with Chef Gennaro at the Masseria Barbera Restaurant and Farm owned by Riccardo Barbera (a former lawyer who saw the light) and his wife Stefania. This was by far the most intensive of our cooking experiences. Chef Gennaro is required by the Barberas to use as his base recipes from Riccardo's ancestors, hand-written family cookbooks, but adds his own personal touches. He was a master in his kitchen and had a staff of 4 others who were very knowledgeable about the more complex recipes that we used here. And it was from him we learned that the pasta made in La Murgia uses eggs, white wine vinegar and egg yolks, unlike the pasta in the southern part of Puglia which uses no eggs. Interspersed were trips and dining experiences in Trani (a seaside town important in the trade), Minervino Murge (a hill town close to Basilicata), a visit with Giancarlo Ceci, a farmer who pioneered biodynamic production (think ultra-organic, but better), Giovanni Mucci, an artisanal producer of "confetti" (no, not the shredded paper kind), and more. Marika could only join for the first weekend, but gave us the health underpinnings of the true Mediterranean diet as well as considerable help in making the Pugliese bread. Frankly, this combination of Cinzia's massive research, passion for great, but simple healthy food, great wine and even greater olive oil, Marika's healthful underpinnings, fabulous scenery, learning about the various lifestyles and both of their great senses of humor and entertaining delivery keep us coming back year after year. Cannot wait to find out what Cinzia has planned for next year.

It is always such a pleasure to have the two of back with us! You are amazing "students" and it is so meaningful and important for us that every year you enjoy coming back and learning about our slow cooking method and healthy artisanal foods and wines. And it is even more important that every year, on your return back home, you keep sharing what you learned with us with your family and friends, organizing such amazing events and publishing such beautiful books. We cannot thank you enough for all this and look forward to more fun and educational experiences together.

Cinzia is a masterful educator and animator!! She came and taught our group all about olive oil, the good the bad and the ugly. Touring the olive grove, tasting the various qualities absolutely changed how we will approach buying and using olive oil.
Puglia will again be a destination for us as we want to spend more time at Cinzia's school. A truly delightful and educational experience

We have now taken three week-long excursions with Cinzia Rascazzo. The first was a week centered in Lecce which included cooking the Pugliese diet (three days of cooking classes) plus winery and olive oil production tours and tastings, as well as an introduction to Puglia in general. Marika helped on this tour. Marika is a cardiologist and has written the cookbook on this style of food (which is different) and healthy. Cinzia is the one in charge of us. And their mother, Dina, even stepped in to help us learn how to make one of the pastas. This first week caused us to become Cinzia groupies. She does her homework, is knowledgeable and is most concerned that her patrons have a great experience. Having been so satisfied with that trip, we then went to Piemonte a year ago (November 2015) in search of the elusive white truffle. On this trip, there was less emphasis on cooking and much more on wine and food (including a white truffle hunt and a trip to the Alba International Truffle Festival). Like the first experience, this one was outstanding and caused us to sign up for the Sardinia trip this year. This was a totally different experience - three different areas of Sardinia with three totally different histories and backgrounds made for a most fascinating time. Again, there was only one day of our cooking, but we did partake of quite a number of unique food offerings, including a whole pig and whole lambs spit-roasted over an open fire with shepherds in the hills of Barbagia. Because Cinzia obtained her MBA at Harvard and worked in the United States for a major investment banking firm, her English is first-rate. Marika spends more time in Lecce, but travels quite a lot (and joined for the Sardinian trip). Her English is also good, although not as good as Cinzia's. Both of these young ladies are delightful and have done the necessary homework to provide both an entertaining and educational experience. A number of us almost blindly sign up for whatever Cinzia is offering next. Highly recommended does not begin to cover the subject.
