Incredible cheese with a wonderful history, between Varenna and Sondrio

Our agent set up our visit as part of our tour, and I initially did not comprehend why we would visit a cheese cellar. We arrived to learn the English interpreter had car trouble but the owner had phoned a friend with a business in the USA and he would be with us soon. When his friend arrived, we learned the historic technique used to produce Bitto cheese. After the presentation in the cellar, we climbed the stairs to the tasting area. We then began sampling the cheeses of various ages, youngest to oldest. Our driver for the day correctly described how we would need only a small tasting of aged cheese. The 10 year old Bitto explodes with flavor. The owner provides a wine pairing from the region. The entire experience will be remembered fondly. If traveling in northern Italy near Lake Como, we highly recommend this stop.

A treasured piece of history in Bitto Cheese

This is all about one of the oldest cheese in Italy ... Bitto and the attempt to preserve the traditional process in the high pastures of the pre-alps. Preserve it for its history and to keep the mountains pastures viable. The cheese is made on the mountain tops and aged in this small village. If you are interested in the real Italy, this is a must visit. Gerola Alta is the small mountain village where the cheese is first stored when it comes down off the high mountain pastures.
